Shrimp Quiche Sharon

 

Whether from Lorraine or of German descent, quiche takes on local appeal with Texas shrimp.

 

Chop shrimp. In small saucepan, cook mushrooms and green onions in margarine until tender. In large bow.-, combine eggs, half and half, salt, dry mustard, nutmeg and cheese. Fold in shrimp. Pour mixture into pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 300 degrees and continue to bake for 30 minutes or until knife, when inserted i% the center of quiche, comes out clean. Let stand 5 minutes before serving. Makes b servings.

¾ pound cooked shrimp
1 cup sliced fresh mushrooms
¼ cup chopped green onions and tops
¼ cup melted margarine or butter
4 eggs, well beaten
1½ cups half and half or light cream
1 teaspoon salt
1/8 teaspoon dry mustard
1/8 teaspoon nutmeg
1 cup shredded Mozzarella cheese
1 unbaked 9-inch pie shell
